I might like this cake decorating stuff after all!

So I am a total beginner at all this baking stuff, let alone sugar flowers and fondant and wedding cakes (although I do like eating them!) - but I would say in my basic training, my best tip would be about whipped cream.
I find that if I strain it for a while after whipping it, some excess liquid comes out, and then the cake I put it on does not get soggy. And also to add some icing sugar before whipping it up so it tastes sweeter :)Unknownhttps://www.blogger.com/profile/00906719469485295993noreply@blogger.comtag:blogger.com,1999:blog-5493836759901211577.post-17799579002432207312010-08-29T16:35:58.334-04:002010-08-29T16:35:58.334-04:00This interview with Jen Dontz was great. I can't wait to get her new DVD as I am sure it will be an excellent addition to my instructional DVD collection.
My best tip for cake decorators is to invest in pegboard. Have a recipe that you really like the flavor and texture of, but is not as moist as you'd like? Well, I had that issue when recipe testing my red velvet cake. My small batch of RV cake calls for 6 ounces of butter, but the cake wasn't super moist. What I did is added 2 tablespooons of vegetable oil, and I had the PERFECT red velvet cake! I'm a relatively new decorator in the grand scheme of things, but my tip is just to try, try, and try again...never give up. Through those trial and errors you will find what works for you. There are many reasons for this. One, the camera eye is different from your own, and can give great perspective on how your cakes really look. Two, the pictures are a great reference for you, and to show others your work. Lastly, its great (and usually pretty funny) to go back and "remember when....?"Audreyhttps://www.blogger.com/profile/12682683751974204818noreply@blogger.comtag:blogger.com,1999:blog-5493836759901211577.post-16339616344126394832010-08-29T13:46:09.826-04:002010-08-29T13:46:09.826-04:00Great Feature you have started Mark, I will be fol...Great Feature you have started Mark, I will be following your blog to read about other famous cake artists.

My tip: For new decorators, keep detailed notes of every project. From batter amounts per recipe per pan size to costs, qty of fondant/ fillign consumed per cake, time taken for every little task and what you learnt along the way. Not only will this make you smile a few years down the line when you realise how much more efficient you are now...:) But seriously it helps you cost your next project more profitably and plan your time more effectively in the long run.
